Cooking With Christie: Traditional Soda Crackers

Inspiration: I love soda crackers. Unfortunately, all major brands use enriched flour, something I can no longer have (stupid allergies), leaving a square shaped hole in my heart.

Until I stopped and thought about it — there’s no reason why I can’t make my own!

Looking around the internets, I discovered a promising recipe by King Arthur Flour…so I tried it out. Sadly, my first attempt was not flawless. (I’ll post a pic when I finally perfect them!)

Whilst I did not change any of the ingredients (I know you’re shocked), I did forget to prick them with a fork — so they resemble pita chips in their look while tasting like soda crackers! And the flavor is fantastic! (I’d suggest purchasing a jar of barley malt syrup rather than using regular sugar — it adds a lot of flavor and isn’t expensive.)

The other thing I love about this recipe is you make the dough one day, let it rest overnight, then bake it the next. So if you’re not feeling super energetic, you don’t have to sink too much time into making or baking!

FYI: Now, when you read the recipe, it looks complicated (or at least it did to me). However, once you get comfortable with it (like your third time thru), it comes together quickly. The other thing that really helps? A rolling pin with thickness rings — so you never roll your dough too thin. You don’t NEED one to make these crackers. I’m just saying it’s a huge help!

Christie: Honestly? I can see Miss Marple making these as they are a bread box staple!
